On Sundays, they have “Schnitzeltag”: One can create one’s own wish of Cordon Bleu (or just a Schnitzel) by selecting the meat (veal, beef, pork, chicken), various types and flavors of breading and several options for stuffing.
I’ve opted for pork with a classic breading and stuffing with local cheese and wild garlic.
Once the plate was served, two things stood out - the beautifully arranged salad and the small size of the Cordon Bleu. The former was a delight, the latter a small disappointment given my hunger, but after all, quality is what counts, not quantity. And the quality was certainly there; the meat was excellently prepared, the breading hitting the perfect spot between soft and crisp, and the cheese wonderfully creamy. I didn’t really taste much of the wild garlic though. The fries were excellent, the salad on the other hand was lacking a certain je ne sais quoi - while visually pleasing, the dressing was a bit bland.
Overall: Definitely an address I can recommend. However, a bit of expectation management is required - many Cordon Bleu temples cater towards their carnivorous customers by serving ridiculous amounts of meat, typically too much rather than too little, which is certainly not the case in the Bären Buchsi.
